OP, this isn’t just immaturity, melodrama, or her being ridiculous. This is her inherent expectation that you will cover her expenses no matter what. It probably ties into her idea of the man being a provider, which may have been appealing to you until now.
If that’s what you want to do, then give her the $1k or any amount of it, apologize, and accept what she is offering. If this is not what you want, then it’s time to move on instead of minimizing her expectations as only melodramatic.
