I lived in a house where everyone locks doors. There’s no such thing as barging in for any reason.
Can confirm not locking doors is weird and feels unsafe and not private. Id have anxiety someone would just burst in, even though I’m just browsing my phone doing nothing wrong.

It might be malicious, that OP is leaving notes and the girlfriend “doesn't notice them” is pretty damning, honestly. That she “can't remember” doing it or where she put stuff is also a concern; OP does not mention if she has these issues with memory in her day to day work or with other things in her life. (Does she get lost every time she goes to the grocery store because she has issues with spatial recall?)
Or perhaps it is compulsive and driven by ADHD or similar; we really don't have enough info to say. The reason I went there was OP's wording: “Every time she's around and sees something that is “out of place” in her eyes, she puts it away. Hon I am so sorry but you have been clearly wrestling with this for quite some time and nothing has changed she doesn’t want to compromise. She wants to stay in Ohio as much as you love her. Aside from leaving, please report this to the police. He threatened to lay hands on you and be violent and THEN followed it up by getting a knife and threatening further physical harm. This man could hurt you OR YOUR KIDS OR PETS. Please document this with the police and start a paper trail in case he hurts you or tries to lie and say YOU abused HIM (a very common tactic of men like this).
Break up with her and go to therapy. Both of those will be the best things you ever do.
